Green Salsa Surprise
Rice, Green Salsa & Chicken Enchillada Casserole

This tastes SOoooo good! Makes 2 - 9x13 trays or 3 very full 8x8 trays. Great for making a meal or 2 for others!!!!

Preheat oven at 375 degrees.


  • 2 pounds of boneless chicken breast
  • 2 cups of dry white rice
  • 24 pak of Extra Thin Corn Tortillas (or 16 regular corn tortillas)
  • 3 - 4 cups of shredded Monterey Jack Cheese
  • 1 - 24 ounce jar of green salsa 
  • 3 cans of mushroom soup
  • 1 pint of sour cream
  • 1 TBSP of Garlic Salt
  • Optional - 1 3.8 oz can of sliced olives

FIRST¬ - start by preparing the rice and chicken using the following instructions. While the rice and chicken are cooking, you can make the sauce.

  • Prepare white rice, using all 2 cups of dry rice, per the rice package instructions. (on the stove or rice cooker is fine!)
  • While rice is cooking, boil 2 pounds of chicken breast (season with pepper and salt if you like). Once boiled (white all the way through) remove and cut up into small pieces. How to boil chicken? Just throw the chicken breasts - thawed or frozen - into water and turn the stove on - bring to a boil and let it roll! Just take a piece out to check - simply make sure it is white all the way through! Boiling chicken is super easy! And tasty, too!

While rice and chicken are cooking, put the following in a large bowl to make sauce:

  • 3 cans of cream of mushroom soup
  • 1 pint sour cream
  • Entire 24 oz jar of Green Salsa
  • 1 TBSP of Garlic Salt
  • Add olives if you like as well!
  • Mix and stir it up with a spoon and put to the side.

Put the following in another much larger bowl (eventually ALL ingredients will go in here!):

  • Cut up all corn tortillas into about 1 - 2 inches pieces & put into bowl.
  • Put 3 cups of grated jack cheese in bowl.
  • Once the chicken and rice are ready - at the same time, put the chicken and rice into the toritlla/chees bowl and combine/mix.

Once the chicken/rice/cheese/ tortillas are well combined, go ahead and add the sauce!¬ 

Spray pans, then pour in the mix and cover with foil. Bake @ 375 for 1 hour. Remove foil, sprinkle the remaining cheese on top and bake about 10-15 minutes more to brown the cheese.

That's it!!! Serve with cut up veggies on the side and top with extra green sauce if desired!
